Both sites also have amazing looking raw desserts. 

Not everything requires a dehydrator, spiralizer or Vitamix. I&#039;ve used my food processor instead of a Vitamix. Plus soaking nuts in water overnight can help if you don&#039;t have a high-powered blender. 

If you don&#039;t have a spiral-cutting veggie thingie, just use a veggie peeler to make long strips. For zucchini, don&#039;t attempt to make strips from the center part where seeds are, it&#039;s too squishy for a peeler. Save that part for a smoothie later.

And if you don&#039;t have a dehydrator, crack the oven door while on the lowest setting and use an oven thermometer to monitor temp.

Oh, and tell your hubby that while only about 35% raw, my vegan habits has kept my cholesterol lower than 15 years ago when I was a 31 yr old omni, even though I weigh more than twice as much. I believe diet does help. His big big hurdle may in fact end up being the coffee/caffeine. Took me 2 weeks to stop that, cold turkey with headaches.
